Chianti, a Tuscan born wine resulting from a love triangle of great Italian wines: Sangiovese, Canaiolo and Malvasia Bianca, is mixed right into the meat and allowed a very crucial “holding” period to fully infuse its full bodied flavor into the pork meat. Slightly acidic and bold, great for a spring, summer, fall or winter evening.
